Go to Jail for Collecting Rainwater

Go to Jail for Collecting Rainwater
By Jackie Christensen, MSHH, HHP, MH, NC

Believe it or not in some states it is illegal to collect rainwater. If you are a resident of Utah, Washington or Colorado collecting rainwater on private property has been outlawed. It sounds outlandish, but according to lawmakers rainwater is not the property of homeowners. As droughts are become more prevalent and water conservation techniques are practiced by more individuals for personal use, law enforcement officials are claiming rainwater and enforcing regulations.

Collecting rainwater makes sound environmentally friendly common sense, but states that are as dry as Utah attempt to explain their rational by stating that property owners do not own the rainwater that lands on their property and by collecting the rainwater it further jeopardizes the accessibility of public drinking water. However, a study in Douglas County, Colorado disproves this theory. The study explored the methods people used to collect rainwater and its affect on aquifer and groundwater supplies. It revealed that those who collected rainwater used less water from public water facilities, decreasing the demand for water and improving conservation. The study also revealed that only 3% of the rainwater ends up in a stream or other body of water, leaving 97% to seep into the ground, certainly a large enough percent to be used by the public for personal uses (Johnson).

However, the belief that rainwater catchments harm the environment is not shared by all states. New Mexico has enforced mandatory rainwater catchment for all new dwellings in places such as Santa Fe. Arizona has also implemented strategies for city rainwater collection.

Radiation from Fukushima Believed to Infect Alaskan Animals

Radiation from Fukushima Believed to Infect Alaskan Animals
By Jackie Christensen, MSHH, HHP, MH, NC

It has recently been reported that animals in Alaska are increasingly experiencing an odd flesh disease that is believed to be a result of the radiation exposure from the Fukushima explosion. Arctic animals are showing signs of toxicity such as open skin sores, loss of hair, abnormal growths in the brain, deformed lymph nodes and damage to internal organs. The animals have also displayed strange behavior as they are not fleeing from humans and appear to be lethargic with labored breathing. To date over 60 ringed seals have been found dead and 75 diseased, additional reports continue to be submitted. Walruses have also been affected.
Bacteria and viruses have already been ruled out as possible causes, as the animals have been screened for 18 common pathogens.

The Alaskan coast is directly exposed to the ongoing trail of radiation from the Fukushima explosion, which is why it is expected to be the origin of the unexplained illness. Various scientists have stated that the symptoms displayed by the animals are classic signs of radiation poisoning. The Institute of Marine Sciences at the University of Alaska Fairbanks is analyzing tissue from the infected ringed seals. Researcher, John Kelley has stated, “They sent a large quantity through (state) public health in Anchorage. It’s quite a job. We have to freeze dry it, grind it and analyze it. This will take some time.” The Institute of Marine Sciences began the tissue analysis before the holidays and is testing for testing for radionuclide Cs-134 and Cs-137, which will give indication if the Fukoshima explosion is the cause.
Alaskan officials have stated that they may increase the amount of radiation monitor in rural areas as a precautionary measure.

Frankenfish Coming Soon?

Frankenfish Coming Soon?
By Jackie Christensen, MSHH, HHP, MH, NC

Individual states bare the right to enact laws pertaining to the GMO salmon approval and as the FDA nudges closer to approving genetically engineered salmon lawmakers in California and Alaska are introducing bills that would require the frakenfish to be clearly labeled to alert consumers. Alaska has also introduced a bill that would ban the cultivation of genetically engineered animals in Alaskan waters. Additional states such as Oregon and Washington are expected to introduce similar bills if the federal government approves genetically engineered salmon.

AquaBounty Technologies’ is pursuing FDA approval to market an engineered Atlantic salmon which includes genes from the Chinook salmon to double its growth rate. Consumer groups who are petitioning the salmon say that the way they are created alters the nutritional value; therefore they should be treated as a food additive which would require more scrutiny in the review process. GMO animals are currently categorized as a new animal drug, which includes the same classification and regulations required for veterinary drugs, which are obviously not intended for human consumption.

The FDA has opposed labeling foods from GMO crops because they have not been altered in their characteristics or nutritional content. The FDA is currently reviewing AquaBounty’s application for FDA approval of Aquadvantage salmon. If approved it would be the first genetically engineered animal for human consumption available on the market, paving the way for others to follow.

All GMOs are patent based products. Once a fisherman produces GMO fish or their waters become contaminated with the frankenfish they will have to purchase it to use it. We have already seen complications in this area with GMO seeds contaminating non-GMO gardens.

Adequate testing of GMO products by the FDA is still lacking. However, according to Food & Water Watch Executive Director Wenonah Hauter, the company’s own study showed that genetically engineered salmon may contain increased levels of a hormone linked to breast, colon, prostate and lung cancer.

Cleansing with Kitchari

Cleansing with Kitchari
By Jackie Christensen, MSHH, HHP, MH, NC

Kitchari is an Ayurvedic hot dish made with a mixture of rice, mung beans, ginger, cilantro, and other spices. According to Vasant Lad author of Ayurvedic Cooking for Self-healing, “Kitchari is the Sanskrit word for “food of God.” Ki also means space, and chari means move, so kitchari helps you move into the inner space, the inner sky of consciousness. Kitchari translated in English is much less poetic and means “mess of a stew.”

Kitchari is a classic Indian comfort food and tastes like a thick hearty lentil soup. It is a dish that is designed used to cleanse the digestive system and release toxins from the body. According to Ayurvedic beliefs’ consuming a diet of only kitchari gives the digestive system a much needed break, so healing in other parts of the body can begin. The digestive system is constantly working to digest food and consuming a diet of only kitchari gives the body a rest from digesting difficult foods. It is considered to be a mono-diet, which is when only one food is consumed. This is beneficial because on a normal diet the digestive system has to produce a variety of enzymes to break down food. Consuming only one food lessens the amount of work the digestive system has to do. Some yogis give up food to release the restrictions that the material world can hold on a person and make a vow to only consume kitchari for the rest of their life. I’m not quite ready to make that commitment, but if you are thinking about doing a winter cleanse kitchari can be a warm and satisfying approach.

Kitchari can be made in a variety of ways it can be made thick or thin soupy, and the ingredients may vary. Some people use basmati rice and others use brown rice, basmati is easier for the body to digest and is balanced for all three doshas, brown rice has more nutrients. The mung beans used are traditionally split because they are easier to digest but are sometimes replaced with whole mung beans or lentils. The spices may also vary, but generally to make kitchari start by rinsing one cup of split yellow mung beans and set aside to soak for several hours. Chop one tablespoon of ginger, and one handful of cilantro. Combine ginger and cilantro in a blender with ½ cup of water and blend. In a large saucepan lightly brown, ½ teaspoon of cinnamon, ¼ teaspoon of each of the following: cardamom, black pepper, clove powder, turmeric, and salt with 3 tablespoons of ghee. Drain the mung beans and add to spice mixture, then add one cup of raw basmati rice along with six cups of water. Bring to a boil and reduce heat to a simmer for 25-30 minutes.

The Basics on Food Facts

The Basics on Food Facts
By Jackie Christensen, MSHH, HHP, MH, NC

Going to the grocery store can be an overwhelming experience as we are inundated with flashy labels that make bold and tantalizing promises. As a consumer it is challenging to make good and healthy choices. Manufactures have a variety of terminology at their disposal to allure customers into taking their product home. Some of the words used on packaging labels are regulated while other words can be used without discretion. Some label teases include fortified, enriched, added, extra, and plus, such terminology is misleading because the consumer is lead to believe they are purchasing an item that is nutritious. In reality fortified means that vitamins and minerals have been removed through processing and chemicals have been added to replace them, look for 100% whole-grains to avoid fortified foods. Fruit drink is another label to avoid. The word drink means little or no real fruit and a lot of sugar, closer to a soda than juice. Instead look for products that advertise 100% Fruit Juice. Natural is another term that is loosely used. The manufacturer may have started with a natural source, but once it is processed the food may not resemble anything natural. Look for a label that touts organically grown, pesticide-free, or no artificial ingredients on the label. Trust only labels that say Certified Organically Grown. Processed products that contain at least 70 percent organic ingredients can use the phrase made with organic ingredients. Products labeled organic must consist of at least 95 percent organically produced ingredients (excluding water and salt).Sugar-free or fat-free can also lead one to assume the product is low-calorie, but generally the manufacturer has compensated with other unhealthy ingredients and the product may not have fewer calories than the real thing.

For a manufacturer to advertise a product as low such as low fat or low sodium it legally must have less than 5% of the daily value. For a product to bear good source on the label, such as a good source of calcium it must contain 10-19% of the daily value. To be labeled as high such as high in fiber the product must contain more than 20% of the daily value.

Be mindful of the serving size. If you regularly the whole box or bag and there are several serving per container make sure to adjust the caloric intake and daily percentages to your level of consumption. When there is a limited amount of time available for grocery shopping, check the serving size, nutritional facts, make sure it is organic, compare a few items and pick the best one.

Traditional Chinese Medicine (TCM) Seasonal Attunement: Winter

Traditional Chinese Medicine (TCM) Seasonal Attunement: Winter
By Jackie Christensen, MSHH, HHP, MH, NC

December 21st marked the date of the winter solstice and according to the Chinese Five Element system it is the time when we move from autumn into winter. The element related to this time of year is Water. Water is an essential fluid for the body. It helps the body remove toxins and eliminate waste. It supports the flow of perspiration, tears, saliva, lymph and other bodily fluids. The organs associated with this time of year are the bladder and kidneys, which work with the body’s water content.

The climate associated with this time of year is cold and the direction is from the north. Therefore the kidneys are nourished by the cold, but extreme coldness or dampness can injure them so it is important to keep them warm. If there is overexposure to cold and damp weather it can cause stiffness and pain in the low back area.
The flavor associated with the Water element is salty. This is appropriate for winter because salt derives energy downward which creates a feeling of being grounded. If there is a strong craving or aversion to salty foods during the winter season it could be indicative of a Water imbalance. Salty foods that should be consumed this time of year include seaweed, miso, millet, barley, etc. The use of salt should be consumed with care because overindulgence is related to health imbalances such as water retention, high blood pressure and kidney issues.

The emotion associated with the water element is fear. As the kidneys are deeply rooted in the within the body so is fear. Fear is a natural feeling and a healthy expression of fear is beneficial because it protects us from foolish or risky behaviors. However, if there is a Water imbalance excessive fear may be experienced this time of year. A general fear for one’s survival for no apparent reason or a general anxiety about life are examples of a Water imbalance and can injure the kidneys. Agitation, nervousness, and insecurity are all signs of a kidney imbalance. Physical symptoms of a kidney yin deficiency include dizziness, ringing in the ears, dry mouth, low back pain, fever, spontaneous sweating, and weak legs.

To evaluate the health of the kidneys one can look at the condition of the skin, a bluish hue around the eyes may suggest a Water imbalance. Hair growth can also provide an indication of kidney health. Premature loss of hair, dry, thinning, oily hair or rapidly changing hair can suggest a Water imbalance. Herbs that are recommended this time of year include marshmallow root asparagus root, aloe vera gel, and prepared rehmannia root. Marshmallow root is good for reducing inflammation and soothing the bladder and kidneys. Winter warming herbs such as ginger and cayenne pepper can also be incorporated to help heat the body and stimulate digestion.

GMO Label Initiative in California

GMO Label Initiative in California
By Jackie Christensen, MSHH, HHP, MH, NC

Genetically Modified Organisms (GMOs) run rampant in today’s produce, meat and commercial food items. Even stores that were thought to be health food grocers such as Trader Joe’s and Whole Foods carry GMO products. California is making a significant attempt to end manufactures that slip GMOs into their products by requiring all GMOs to be clearly labeled. On November 9, 2011 the grassroots organization Committee For the Right to Know along with many other consumer health organizations such as Organic Consumers Association, Dr. Bronner’s Magic Soap, Center for Food Safety, Mercola.com, Nature’s Path, Natural News.com, LabelGMOs.org, Food Democracy Now, and the Institute for Responsible Technology, submitted the California Right to Know Genetically Engineered Food Act to the State Attorney General for title and summary as an initiative for the November 2012 election. This initiative would put the requirement of labeling GMO foods on the ballot. GMO foods would be labeled similar to the nutritional food facts label. The bill has been carefully written so that there will be no added expenses passed down to the consumer and according to a public opinion poll, 90% of the population would vote to have GMOs labeled.

GMOs can be found in both plant and animal products and contain DNA that has been genetically altered. This is done so they can withstand an extremely high amount of pesticides and growth hormones, so they can grow at an abnormally rapid rate. They have been referred to as the Frankenstein of the food chain and have not been appropriately researched for human consumption. Studies have shown that consuming GMO foods can create autoimmune imbalances in the human body such as allergies and cancer. Children are especially vulnerable because their immune systems are not fully developed.

It is estimated that as much as 85% of the corn grown in the United States is genetically engineered. Some manufactures that use GMO ingredients include Nabisco, Betty Crocker, Bisquik, Duncan Hines, Jiffy, Pillsbury, Hershey’s Pepperidge Farm, and Wonder.

Fifty countries have already implemented compulsory laws for labeling genetically engineered foods, but nowhere in the United States are GMOs regulated. Soon California voters will have the opportunity to vote on the initiative and if it passes activists believe it will put an end to the manufacturing of GMO food in the US.

Winter Solstice Celebration

Winter Solstice Celebration
By Jackie Christensen, MSHH, HHP, MH, NC

Solstices are symbols of transformation from within the universe and oneself. Cycles happen within a breath, day and a lifetime and it is important to know one’s place any given cycle. Certain actions can be productive if they are preformed at the right time or they can be destructive if they transpire at an inappropriate time. Tomorrow is the winter solstice which is the shortest day of the year. We will experience a late dawn and an early sunset. After the winter solstice passes the triumphant daylight begins to slowly elongate and the nights become shorter. It is a sign that the daylight has returned and a new year will begin. Yet this movement is slow and to be attuned to the rhythms of nature one will be strengthened through rest. Staying grounded during this season is optimal for health and wellbeing.

The winter solstice has been recognized as a time to appreciate the light and the inspiration it brings to create art, music and joyfulness. Traditional Chinese culture views sunrise on the winter solstice as the most appropriate time to worship the Earth goddess. This is because the masculine or yang characteristic is at its strongest and most powerful and because the yin or feminine characteristic is being born and is becoming more energetic. Ancient cultures participated with the seasonal cycles through rituals and celebrations, but most of the modern society is too absorbed in technology and internal conversations to notice the motions of the planets or cycles of the plants and animals. To honor the seasonal rhythms of the earth Richard Heinberg, author of Celebrate the Solstice: Honoring the Earth’s Seasonal rhythms through Festival and Ceremony suggests visiting a place in nature that is sacred to you, perhaps a stream, forest, rock or cave. It is not necessary to take an expansive journey to find this place; it could literally be in your backyard. One benefit of finding a place that is close to home is that allows you to feel a deeper connection to the land and the area where you live. Once you have found your sacred place use your intuition to guide you and walk around in the direction you feel appropriate. Notice your surroundings with a clear mind and an open heart. Once you have found a place that feels special to you, ask the universe for permission to sit down. With a feeling of respect for the land meditate on receiving healing light and offer care and protection to the Earth and her residents. If you reside is a place where it is too cold to sit outside perhaps simply watching the sunrise and sunset would be a good way to reconnect with the rhythms of the Earth.
